Tacos are for Tuesdays—and today’s the day! Taco Tuesday dates back to 1989, when it was registered for a trademark by the Mexican food chain restaurant Taco John’s. It has since been used by restaurants near and far, including at Plant Matter Kitchen. Every Tuesday we subvert tradition by creating a delicious vegan version of the traditional taco. This week, PMK’s tacos feature our special spiced cauliflower drizzled with our delicious cilantro lime dressing, served on our freshly baked house-made tortillas accompanied by a side of our rice and beans.
